Aren't all vegetables...vegetables and therefore, low in carbohydrates and calories? Not necessarily. There are vegetables that will definitely keep that carb count lower, and fiber count higher.
Here's a little secret.
Some vegetables are considered "starchy" because they contain higher counts in carbohydrates and calories compared to other vegetables. For example, corn, peas, potatoes, parsnips, pumpkin, butternut squash and carrots fall into this category.
